Tasting note
Bright, light ruby red color. Flavours of raspberry and redcurrant with a subtle cinnamon spice. Silky smooth texture with very fine tannins. Truly distinctive.
Vinification
After crushing and a brief cold-soak. Spontaneous malolactic fermentation in stainless steel and small French oak. 30-day total maceration in the tank to preserve the varietal's character. Aged in stainless steel and selected wood.
Food Match
Gazpacho, pasta carbonara, classic Italian lasagna.
