Tasting note
A glorious Chardonnay Champagne, vibrating with nectarines, pineapples and peaches, preceded by a delicate, defining spritz of citrus.
Vinification
The grapes are obviously hand picked and the fermentation takes place in temperature-regulated stainless steel fermenters. Full malolactic fermentation and a dosage of 9 g/l.
Food Match
A perfect champagne for aperitifs, particularly in spring and summer. It is an excellent accompaniment for seafood and shellfish; perfect with a sea bass or bream tartare. It would also be very good with seared sole.
