Tasting note

The nose is marked by interwoven, intense aromas of red currant, mint and warm pie crust. These continue to the palate where they support concentrated flavours of blackberry and cassis. A densely structured mid palate is framed by balanced acidity and exceptional length.

Unique Selling Point

Cabernet Sauvignon was the first wine produced by Rombauer Vineyards when the winery was founded in 1980. This bottling is made exclusively with Napa Valley fruit from both vineyards owned by the Rombauer family as well as carefully selected sites from some of the region’s top growers.

Vineyard

The fruit for this wine comes from vineyards in the St. Helena, Calistoga, Stags Leap District, and Atlas Peak AVAs.

Viticulture

A mild winter with minimal precipitation ended with an early spring frost, reducing yields for the harvest. A hot summer, led to berries with intense and concentrated flavours. Sustainable farming practices throughout the growing season were tailored to each block. Harvest was long with ideal conditions.

Vinification

The grapes were destemmed and optically sorted to ensure only perfect fruit made it into the wine. A cold soak extracted colour and flavour before a combination of tank and barrel fermentation was used to provide a richer, textured palate. The wine was gently basket-pressed before being racked to French oak barrels for malolactic fermentation and aging.
