Viticulture
Carefully managed estate fruit from our To Kalon Vineyard; sustainable vineyard management practices, vineyard in process of being organic certified.
Vinification
The fruit for this Fumé Blanc was harvested by hand between August 16 and September 1. The juice was barrel fermented, then aged for eight months in French oak barrels (23% new).
