Tasting note
Pale salmon colour. Clean and very bright, with the presence of legs in the glass. Medium intensity on the nose. Citrus (lemon and grapefruit) and red fruit (cherry and strawberry).
In the press
I love the colour of this wine – it is just a shade pinker and more exotic than the Provence styles, and this gives it a more party-like feel. The perfume and palate back this up, with faint melon and rhubarb hints which tantalise the taste buds, and the finish is every bit as crisp and dramatic as you might expect, too.
Viticulture
The growth cycle of the 2016 vintage was characterised by a general delay of 15 days compared to a typical year. After a very cold end to the winter, budburst began in the first weekend in April.
Vinification
The Garnacha grapes for this wine were picked plot-by-plot according to ripeness levels during October. After harvesting, the fruit was vinified using the saignée method and underwent a 4 to 6 hours maceration to give colour and fruit intensity to the final wine.
Food Match
Ideal as an aperitif and cold dishes such as white asparagus and seafood salad. It goes also well with vegetables, pasta salad, grilled fish.
