Tasting note
Straw yellow colour with emerald hues, bright and clean. On the nose this 100% Verdejo is intense and aromatic with a tropical character and citrus notes such as lime and peach.
Viticulture
Growing conditions during the cycle were excellent. The winter was cold with night frosts as expected in a region with a continental climate. During the harvest the nocturnal cold is a key factor in ensuring that the grapes are picked at a low temperature to avoid oxidation.
Vinification
The grapes are cooled and taken to pneumatic presses. The must is fermented and temperature controlled in stainless steel vessels at a very slow rate. The wine is creamy due to the period of ageing with the lees after fermentation.
Food Match
Ideal as an aperitif or with starters like smoked salmon. Also it is a great companion for any kind of vegetable dishes such as artichokes and asparagus.
