Vineyard
Coviñas’s vineyards are planted on high-altitude, southeast-facing slopes in Utiel–Requena, benefiting from excellent sun exposure and significant diurnal temperature shifts. The old vines thrive in calcareous, low-fertility soils, promoting balanced growth and concentrated, mineral-driven fruit.
Viticulture
The Viura grapes are grown in the high-altitude vineyards of Utiel-Requena, where the combination of warm days and cool nights ensures optimal ripening while preserving acidity. The region’s limestone-rich soils and dry Mediterranean climate contribute to the freshness and purity of the fruit.
Vinification
The grapes are harvested at night to preserve freshness and prevent oxidation. After gentle pressing, the must undergoes cold fermentation in stainless steel tanks at controlled temperatures (around 14–16 °C) to retain the varietal aromas and crisp character. The wine is then clarified, stabilized, and bottled early to preserve its youthful expression.
