Tasting note
Hugely complex, this wine has concentrated aromas and flavours, married to wonderful freshness. Lively and juicy, it's like biting into a just-ripe cherry that bursts in your mouth, and yet is far from straightforward, with intriguing nuances of spices, Mediterranean herbs, olives and well-integrated oak.
Vinification
A field-blend of 25-30 varieties of old vines from an assemblage of steep vineyard plots, the fruit for this wine was exclusively hand-picked, and taken to the winery in 25kg crates to preserve quality. After destemming, crushing and fermentation in stainless steel, maturation was in 85% French and 15% American barrels for 16 months.
