Tasting note
Bright, pale gold with green highlights. Elegant and aromatic, showing white flowers, green apple, lemon zest and wild pear, with subtle notes of honey, mint and volcanic minerality. The palate is fresh, precise and finely textured, balancing vibrant citrus fruit with a savoury, saline character. Long and persistent, with a clean mineral finish. A refined, contemporary Etna white defined by freshness, purity and volcanic elegance.
Viticulture
Grown on the northern slopes of Etna in Sciaranuova, at approximately 815–860m, on black volcanic soils rich in mineral-bearing lava sands. Guyot-trained vines are cultivated organically under the SOStain® protocol, with natural ground cover and minimal copper and sulphur treatments. The high-altitude climate promotes slow ripening, freshness and aroma.
Vinification
Grapes are harvested by hand into crates and immediately chilled to preserve freshness. After careful selection, gentle destemming and soft pressing, the settled must ferments at controlled temperature in stainless steel. The wine then rests on fine lees with regular stirring until February/March, before bottling.
Food Match
An ideal match for seafood dish; pairs extremely well with oily fish. Planeta strongly suggest to pair it with Tagliolini with zucchini, capers and mint or wild mixed herb soup.
