Tasting note
Sparkling golden-yellow, in the nose herbs and an idea of nutmeg; on the palate robust with fresh nuances of citrus and ripe pear; a hint of wood gives the wine balance and round body. Nice acidity and vital fruit in the finish.
Vinification
In the cellar the grapes have been destemed and squeezed and must was standing approx. 8 hours before being pressed by a pneumatic press with low pressure. 10% have been fermented and stored in new Barriques, 90% in stainless steel tanks. The wine was bottled in our cellar in Burgundy-bottles.
Food Match
Wonderful to fish or stronger poultry and veal.
