Tasting note
The wine is fresh, pure and supple with juicy red cherry and plum fruit on the nose. It’s very bright and elegant in the mouth with fresh fruit with a bit of crunch on the finish.

Vinification
The grapes are handpicked around the end of March, de-stemmed and fermented using natural yeast in 3000 litre concrete vats, which David has designed. After 40 days maceration on the skins, with daily punch-downs, they rack the wine to neutral French oak barrels, where it stays for 14 months before bottling. The wine was bottled without fining or filtering.
