Luscious dessert wine, exhaling yellow plum and star fruit, then filling the mouth with golden pineapple and candied lemon.
Viticulture
Proximity to Lake Ontario allows for full ripening of grapes while retaining acidity. Total icewine vineyard size 250+ hectares . 544 vines/ hectare planted North /South to maximize sunlight. Trellis/ Canopy: Scott Henery/ VSP. Pruning 2-4 cane kniffen
Vinification
"Naturally frozen Riesling grapes are hand harvested at -10°C. Pressed frozen, releasing only one drop of pure extract from each grape. Fermentation is performed at a cool temperature to retain fruit concentration. The wine is aged 100% in stainless steel.
