Tasting note
resh and vibrant, while at the same time complete and full of energy, this is a clear, affable, open and frank character, whose production is taken very seriously by Pago de los Capellanes to obtain a blissfully satisfying wine with every vintage. This is bright Tempranillo, overflowing with red fruit and lightly perfumed with vanilla and a breath of mint.
Viticulture
Founded in 1996 by Paco Rodero and Concha Villa, Pago de los Capellanes is one of Spain’s modern classics. Its 125ha of vineyards, set around eight ancient walnut trees and split into 35 plots, are vinified separately in Jesús Manzanares’ state-of-the-art winery to craft elegant wines built to age.
Vinification
After chilled pre-fermentation, spontaneous fermentation begins without added yeast. Over 22 days, the wine is pumped over and stirred daily to manage extraction, density, temperature and yeast development. It then undergoes 24 days of malolactic fermentation at 20ºC before transfer to new French oak barrels for five months.
