Tasting note
Single-vineyard Tempranillo, lustrous with black fruit, leather, roasted coffee and seductively scented with spice, sandalwood, cacao and a lick of liquorice.

Viticulture
Founded in 1996, Pago de los Capellanes by Paco Rodero and Concha Villa. 125ha of vineyards, 8 ancient walnut trees, 35 plots, max 5000kg/ha yield. State-of-the-art winery by Jesus Manzanares. Classy, elegant wines aging gracefully. Nogal: 6ha chalky clay site.
Vinification
Before alcoholic fermentation, tanks are chilled for 6 days at under 14ºC, extracting aromas and color from the skins. Alcoholic fermentation, lasting 30 days, is closely monitored for temperature and yeast. Natural malolactic fermentation for 20 days at 21ºC. Aged 22 months in new French Oak, unfiltered and unfined. Decant before serving.
