Tasting note
Ossian’s ungrafted, pre-phylloxera Verdejo vines, some up to 200 years old, sink deep into Cambrian slate soils near Santa María la Real de Nieva. The shale imparts a sharp, cool minerality, while the wines are elegant, intense, silky, unctuous and enduring, crafted in a Burgundian style.
Viticulture
Peña Aguda grapes are hand selected and harvested under strict quality control, and whole-bunch pressed, without destemming. Indigenous fermentation yeasts reflect the complexity of the fruit, and must is fermented in Burgundy barrels, remaining in French Oak without racking for 14 months before completing 12 months of bottle aging before release.
Vinification
Hand-harvested at optimal ripeness, each “terroir” wine reflects its soil and origin. Native yeast ferments only the free-run must in oak and stainless steel, with meticulous precision. Natural acidity, low pH and seamless oak integration ensure a slow, harmonious evolution and exceptional ageing potential.
Food Match
A crisp glass perfectly pairs with shellfish, oysters or spicy dragon roll.
