Viticulture
Peña Aguda grapes are hand selected and harvested under strict quality control, and whole-bunch pressed, without destemming. Indigenous fermentation yeasts reflect the complexity of the fruit, and must is fermented in Burgundy barrels, remaining in French Oak without racking for 14 months before completing 12 months of bottle aging before release.
