Tasting note
Classic Mercurey Premier Cru, a concentrated rush of fruit on the palate and an appealing woody perfume on the nose; cherries and redcurrants blend with cedar and oak, to exciting effect.
Viticulture
The soil is clayey-limestone, clear marl, gravel and pebbles, at a south/south-west aspect at around 300 metres above sea level. Low yields and manual harvests with a sorting table in the vineyard.
Vinification
Whole bunch ferment with natural yeasts in oak barrels. Full malolactic fermentation. Matured for 12 months in oak, 25% of it new oak.
Food Match
Roasted mallard's aiguillettes and duck leg salmi with bilberries.
