Tasting note
Tangy grapefruit and crunchy mangetout pea pod character on the nose and palate. The aromas, flavours and zesty freshness are provided by the Sauvignon Blanc, however, the Semillon plays the very important role in fleshing out the wine, giving it a satisfying, rounded texture
Vinification
Fruit was picked in the cool hours of the night, whole berry pressed, and transferred to a combination of stainless-steel tanks and large oak casks to enhance texture and aromatic complexity. Following fermentation, the individual parcels remained on fine lees, adding weight and mouthfeel. The wine was bottled early to preserve freshness and aromatic lift.
