Tasting note
Flinty and layered, this Southern Margaret River Chardonnay shows finesse and depth. Aromas of kaffir lime, grilled peach and fresh ginger mingle with struck match and nougat from wild ferment. The palate is powerful yet precise, with a mealy texture, chalky phenolics and a long, savoury acid line.
Viticulture
Drawn from premium southern Margaret River sites, including our estate vineyards Calgardup Brook, Hazel’s and Burnside, plus trusted growers. Calgardup Brook adds mineral drive and lift; biodynamic Hazel’s brings structure and texture; Burnside delivers intensity and finesse, shaping a layered regional Chardonnay.
Vinification
Hand-picked fruit was whole-bunch pressed and wild-fermented on full solids in French oak barriques and puncheons (25% new). Barrels were sulphured soon after primary ferment, with no malolactic fermentation to preserve natural acidity. The wine matured for 10 months in barrel before bottling in January 2025.
