Tasting note
Fragrant and poised, aromas of red currant, violet, and cedar rise first, followed by black olive, tobacco leaf, and gravelly nuance. The palate is velvety and refined with cassis, cocoa, and graphite, framed by fine tannins that deliver length, balance, and understated power from a single Margaret River vineyard.
Viticulture
From Hazel's Vineyard, our southernmost site near Witchcliffe in the headwaters of Chapman Brook. Ironstone gravel loal soils over a clay base. Fruit was hand-picked during the cooler mornig hours.
Vinification
Fruit from one gravelly block at Hazel’s Vineyard was hand-picked and gravity-fed to open stone fermenters, wild-fermented without temperature control. Gentle extraction over two weeks preceded pressing to French barriques (40% new), followed by 16 months underground ageing and minimal filtration to express site.
