Tasting note
A seductive bouquet of fresh blueberries, roasted five spice, cherry confection and white pepper leads to a soft, juicy palate of ripe blueberry, Satsuma plum and savoury cured meat. Sweetly fruited and charming, with fine, long tannins for graceful ageing.
Viticulture
The fruit for this wine comes from our Hazel’s and Calgardup Brook vineyards in southern Margaret River.
Vinification
Whole berries were gravity-fed into concrete and wood fermenters, with a small whole-cluster portion for spice and aromatic lift. Fermented at low temperatures with gentle extraction, the wine spent 14 days on skins before soft pressing and 14 months’ maturation in large-format oak casks.
