Tasting note
Aloxe-Corton in the northern end of the Côte de Beaune is one of the legendary names of Burgundy and this silky, opulent wine has the signature red fruit and farmyard flavours, like strawberries with the earth still on them.
Viticulture
North east of Beaune can be found, Aloxe Corton has exposure to the east, south and west. All of which are excellent. The elevation ranges from 255 to 350m a.s.l. It is known equally for both its white and red wines. The soils consist of a mixture of limestone marlstone and sandy limestone.
Vinification
Harvests are manual and after sorting on the vine and in the vat room, destemming depending on the appellation and vintage, maturing is carried out in barrels including a variable proportion of new barrels according to the appellation, and bottling when the moon is favourable.
Food Match
Pan-seared venison with rosemary and dried cherries or provencal lamb with Mediterranean vegetables.
