Surface area : 30 hectares Soil : sand and gravel
Viticulture
Made from intense, naturally sweet grapes that have undergone noble rot. Harvesting is very delicate and is entrusted to an experienced team. The grapes must be picked by successive berry selection, taking only those affected by Botrytis Cinerea which concentrates the sugars. A rigorous sorting process is undergone to ensure only the best fruit is used.
Vinification
The must ferments in casks, an ancestral technique which facilitates optimal temperature control. Maturation for one year in barrels. Fermentation 5% in new barrel, 15% in 1st use wine barrel and 80% in inox tank. Ageing 7% in new barrel - 28% in 1st use wine barrel and 65% in inox tank during 7 months.
