Tasting note
A satisfying wine, Grand Cru Vaudésir unveils rhubarb and acacia flower nuances. Delicate and refined on the palate, with buttery, brioche hints, and a touch of coconut. Louis Michel & Fils tend the vineyard plot in the lower slope section. Resulting wines are taut, exhibiting a splendid interplay of salinity, full body, and lush textural creaminess
In the press
The 2017 Chablis Vaudésir Grand Cru is soft, open and quite inviting. This is an especially open-knit, silky grand cru that will drink well essentially upon release. There is lovely palate weight and density, as well as quite a bit more richness that will develop over time - but it would not be a crime to open a bottle young. Dried flowers, orchard fruit and spice come together in this harmonious, approachable Chablis.
Viticulture
The wine opens with aromatic warm spice and subtle toast, showing depth and elegance. Ripe plum and red berry flavours are lifted by a cool, refreshing edge. Layers of spice, fruit, and bright acidity create balance and energy. Generous yet focused, it offers refined complexity and vibrant structure.
Vinification
Michel's philosophy: Let wine craft itself. No barrels used. Stainless steel vats, controlled fermentation. Objective: Preserve vineyard distinctiveness. No oak compensation; relies on yields for concentration.
Food Match
Sautéed langoustine with Chardonnay reduction, grilled asparagus with saffron aioli or grilled salmon with Thai curry sauce and basmati rice.
