Tasting note
Impressive, elegant Grand Cru Chablis, wafting white pepper and nutmeg into the nose and flint and lemon onto the tongue.
Vinification
Natural yeast, long temperature-controlled fermentation in tank, with spontaneous malolactic fermentation. Matured on fine lees in stainless steel for at least 16 months with minimal handling and cold settling. Bentonite fining if needed; lightly filtered before bottling.
