Tasting note
Displays the typical 'stony' character of the region, over which are layered exciting notes of white peach, apricot and chervil, thanks to the care and dedication in the vineyard and cellar.
Vineyard
Grapes from eight different areas are used: the left bank of the Serein river, from Pargues to the valleys of Forêts and Vaillons are blended with the parcel just below the Montée de Tonnerre.
Viticulture
Vines located in the heart of the historic vineyards. Varied, moderately deep Kimmeridgian soils with clay and silt textures over marl with oyster fossils. Some limestone.
Vinification
Vinified with no added yeast, using a long, temperature-controlled fermentation with native yeasts and spontaneous malolactic fermentation. Aged on fine lees in stainless steel for at least 6 months with minimal intervention. Cold-stabilized, fined with bentonite if needed, then lightly filtered before bottling.
Food Match
Can be enjoyed on its own but it is also the great aprtner to grilled fish, white meat and seafood.
