Tasting note
The Mencia grape thrives in this part of Galicia, as this single-plot wine demonstrates: raspberries and cherries mingle with violets, lavender and dried roses and the result is softly tannic and exceptionally drinkable.
Viticulture
Franck devotes huge amounts of time to the vines; organic viticulture and caring meticulously to ensure good biodiversity. Grapes from the area of Ribeira Sacra in Galicia; schists soils. It has steep slopes with southern orientation situated at 350m of altitude, with a continental climate. The age of the vines is 50 years. The Harvest is done by hand.
Vinification
The wine-making consists of 10 days with gentle pumping, followed by gentle extraction which was achieved by maceration for 8 days. The wine was aged solely in steel tanks in contact with fine lees for 8 months and bottled in September 2009.
Food Match
Pairs well with red meats; however it is particularly well matched with roast pork and apple sauce.
