Vinification
Grapes are harvested at dawn at optimal ripeness to preserve freshness and aromas. After destemming, the grapes undergo short skin maceration, gentle pressing, cold settling, and low-temperature fermentation. The wine is then aged on fine lees to enhance roundness and complexity.
