Tasting note
Warm, spicy Cabernet Sauvignon from southern France, perfumed with coffee and a subtle whiff of vanilla from the new oak and filling the mouth with ripe blackcurrants.
Vineyard
This specific Cabernet Sauvignon comes from terroirs stretching all the way along the piedmont of the Black Mountain. This warm and dry Mediterranean climate is tempered by refreshing breezes from the mountains. The vines are planted on well exposed stony terraces made of sandstone and limestone sub-soil. Cabernets from this area are concentrated, complex and characterised by aromas of ripe fruit.
Viticulture
Conventional viticulture, HVE 3.
Vinification
Grapes are harvested and fermented separately, then crushed and macerated for 15 days at 26–28°C in concrete tanks with regular pump-overs to extract tannins, color, and aroma. 30% of the wine is aged 5 months in medium-toast French oak, adding complexity.
