Tasting note
Dominated by the Cabernet Franc’s signature wild raspberry, violet, and dried herbs (sage/thyme), with underlying notes of pencil lead and espresso from the new oak. Medium-bodied and elegant on the palate, it shows crunchy red fruit, dark chocolate, and a distinct mineral/iron core. The tannins are firm but well-integrated, leading to a spicy, cooling finish.
Viticulture
The 2011 season was marked by a bizarre "inverted" climate, where a hot, dry spring led to an early flowering, followed by a cool, damp summer that slowed ripening. Success in Saint-Émilion required ruthless sorting and patience, resulting in wines that are more linear, fresh, and "classic" than the blockbuster 2009 or 2010 vintages.
Vinification
Fermented in temperature controlled wooden vats. Extraction was kept gentle to avoid capturing all the high tannins of the 2011 fruit. Aged for up to 18 months in 100% new French oak Barrique.
Food Match
Pairs well with herb crusted rack of lamb, dishes containing wild mushroom such as a wild mushroom risotto, Duck breast with a red wine reduction/black fruit sauce.
