Vinification

Merlot grapes are harvested at optimal ripeness, crushed, and fermented in tanks. Gentle pump-overs extract colour and flavour while limiting bitter tannins. The wine then undergoes malolactic fermentation and ages on fine lees to enhance colour stability, texture, and preserve its vibrant fruit character.
