Tasting note
A glorious sparkling rosé in an old-fashioned bottle that fizzes as much with fine acidity as with bubbles and fills the mouth with fragrant red fruit.
Viticulture
This famous cuvee is made with nearly a dozen different crus, most of them grands crus, mainly coning from the South and North parts of the Montagne de Reims,including Côte de Bouzy.
Vinification
Grapes sourced from 10 different Crus, focussed on Montagne de Reims. Juice is macerated on skins to extract colour and flavour (saignée method) for up to 72hrs before being drained off and fermented off skins. It is aged for up to 5 years, much of that time on lees prior to release.
Food Match
Makes a wonderful summer aperitif, it is also excellent with sushi or fruity summer puddings.
