Tasting note
Lively, generous white with the hallmark "pebbly" quality of Saint-Romain and flavours of yellow plum and gingerbread, all wrapped in a perfume of honeysuckle.
Viticulture
A prehistoric site, Saint-Romain lies at the foot of limestone cliffs, apart from other Côte de Beaune villages. The vineyard, at 400 m elevation, is planted on clay-limestone soils with 10,000 vines/ha and Guyot pruning. Yields are purposefully low at 49 hl/ha to enhance quality and fully express the terroir’s nuances.
Vinification
Fruit is sourced from local growers and then brought into the winery. Then pressed, it is very slow so as to respect fruit. Juices from the very last pressings are not retained. The wine goes directly into barrels after "débourbage" (decanting of white wine to reduce sediment). It is then aged in barrels (25% in new oak) for 6 to 8 months.
Food Match
This flinty styled Saint-Romain is well suited to food that are light and clean. Grilled prawns, tempura vegetables, fresh mussles all make an excellent match.
