Tasting note
Delicious Puligny-Montrachet, juicy with white peaches and nectarines, underlaid with dried fruit and supplemented by a fragrance of almonds and flowers.
Viticulture
Located in the heart of the Côte de Beaune, Puligny-Montrachet is one of the famed Côte des Blancs appellations. Vines are Guyot-pruned at a density of 10,000 per hectare, with yields kept low at 51 hl/ha to enhance quality. The limestone soils, mixed with ochre earth and small pebbles, reveal the terroir’s full finesse.
Vinification
Pressing is very slow so as to respect fruit. Juices from the very last pressings are not retained. No yeasts or enzymes are used. The wine goes directly into barrels after "débourbage" (decanting of white wine to reduce sediment). Ageing is in barrels (25% in new oak) for 12 months.
Food Match
An interesting and refined match for crab or smoked duck. Pasta or legumes proivide an textural element to enjoy.
