Tasting note
Floral, attractive Pouilly-Fuissé, perfumed with almonds and refreshed by a spritz of lemon.
Viticulture
The vineyards of Pouilly and Fuissé span the slopes of Solutré and Vergisson, two iconic limestone cliffs of southern Burgundy. Soils are Jurassic clay and limestone. Vines are Guyot-pruned at a density of 8,500 per hectare, with intentionally low yields to capture the full expression and nuance of the terroir.
Vinification
Very slow pressing so as to respect the fruit. Juices from the last pressings are not retained. No artificial yeasts or enzymes are used. The wine is aged partly in stainless steel vats and partly in older oak barrels between 6 to 8 months.
Food Match
A wonderful match with grilled ot steamed fish and chicken dishes.
