Tasting note
Premier Cru Pommard, elegant and complex, grilled and spicy on the nose with the tang of blackcurrants and gooseberries on the palate.
Viticulture
Planted on clay and limestone soils at 10,000 vines/ha, this vineyard yields 44 hl/ha to limit production and fully express the terroir. The Pommard Grands Epenots lie southeast of the Premier Cru area on the Beaune side. The name “Epenots” originates from an old term meaning “thorny ground.
Vinification
Maceration and vinification last 2–3 weeks, with fermentation started naturally by indigenous yeasts under controlled temperatures. After fermentation, the wine ages 14–18 months in barrels. Extraction is carefully managed to build colour and depth while preserving the finesse and true character of the wine.
Food Match
An excellent Pinot Noir to pair, try with rack of lamb in a herb crust or seared duck breast particularly accented with red fruits like cherries or blackberries.
