Tasting note
Fine-grained, fruity Burgundy, lively with gooseberry and blackcurrant, a long-lasting fragrance of spice on the nose.
Viticulture
Said to be the favorite wine of King Henry IV, this vineyard lies in southern Burgundy, 10 km from Chalon-sur-Saône. With limestone soils and ideal south to southeast exposure, vines are Guyot-pruned and planted at 10,000 stocks/ha. Yields are purposefully low to capture every nuance and expression of the terroir.
Vinification
Maceration and vinification last 2–3 weeks with indigenous yeasts under strict temperature control. Extraction is carefully managed to enhance colour and depth without losing finesse. The wine ages 12–15 months in barrels (10% new oak). Each decision is guided by tasting to ensure true terroir and vintage expression.
Food Match
An excellent paiting with pork rillettes nad crusty bread or game pie.
