Tasting note
A truly delicious and harmonious wine. Pale gold color, very bright. The aromas bring to mind honey, almond and lemongrass (citronella). As the wine matures, intense flavors of grilled hazelnut and almonds are in evidence.
Viticulture
Practicing organic farming since 1990 and biodynamics soon after. Vines from “sélection massale” and Drouhin clones. Soils enriched with compost, manure, wood, or guano, ploughed by tractor or horse. Only approved organic treatments used. Density 10,000–12,500 vines/ha, Guyot pruning, yields 20% below limits. Some grapes sourced from suppliers.
Vinification
Harvesting is done by hand into small open crates to protect the fruit. Grapes are sorted twice: at picking and again on the winery table. Pressing is very slow to preserve quality, with juice from the final pressings discarded. After débourbage, the wine goes straight to barrels - 20% new - for aging over 12 months.
