Tasting note
A floral nose of lilac, rose petal, and violet leads to ripe yet fresh, spicy aromas of cassis and black cherry liqueur. The elegant, medium-bodied palate shows strong minerality with bitter pit fruit notes and a youthfully austere finish. This firm, built-to-age wine is lovely and well worth your attention.
Viticulture
At the southern end of Beaune, beside Pommard, the Drouhin vineyard lies mid-slope with an east/southeast exposure. It forms the largest part of Clos des Mouches (14 ha), half Chardonnay and half Pinot Noir. The clay-limestone soil, lighter and rockier uphill, lends great finesse. Domaine area: 6.82 ha; vines average 45 years old.
Vinification
Harvested by hand in small open crates to preserve fruit integrity. Grapes are double-sorted first in the vineyard, then at the winery. A slow, gentle pressing ensures purity; final press juice is excluded. After débourbage, the wine goes directly into barrels, 25% new oak, and ages 12–15 months for balance and finesse.
