Vineyard
40 years old. At the beggining of the moutain of Puligny, at the left side next to 1er cru Referts and under Combettes. Limestone soil with a little bit of clay
Viticulture
The Chavy family has lived in Puligny-Montrachet for over 200 years. Since Jean-Louis Chavy took over part of the estate, he has built modern cellars and crafts classic wines using natural yeasts, restrained oak and old vines. His Premier Crus offer pure fruit, minerality and graceful ageing, with sustainable viticulture where possible.
Vinification
Pneumatic press, decanting in inox thank during 24 hours and refreshment at 8°. Ageing during 11 months in french barrel with 25% of new oak then racking in inow tanks to be blend during 7 months more. Gentle filtration and fining before bottling
