Elegant Pinot Noir, bright with red fruit, perfumed with sweet spice such as cardamom and cinammon, lightly dusted with vanilla.

Vinification
Severe disbudding to control the yield. Hand picking and then a strict sorting in the cellar to keep only the best grapes. Destemming 100%. Cold pre-fermentation maceration for a few days. Fermentation with natural yeasts with daily pumping over for 10 to 15 days. After devatting, the wine is aged in oak barrels (10% new only)
