Tasting note
Born from the friendship between the Chivite and Arzak families, Las Fincas is a tribute to shared food, wine and family know-how. Intense and fruity nose: strawberry, pomegranate, raspberry, white stone fruit, cherry and blackberry with a hint of rose petals. Palate is smooth, balanced, textured and lively. Long finish with lingering cherry notes. Surprisingly robust given its delicate appearance - smooth, balanced, unctuous and persistent.
Viticulture
Founded in 1647, Chivite is one of Spain’s oldest wine dynasties. In Navarra’s varied climate, its Legardeta vineyard offers cool north-facing sites for Chardonnay and warmer slopes for reds. Low-yielding and biodiversity-focused, it also provides fruit for the acclaimed Chivite Colección 125 Chardonnay.
Vinification
Crafted via saignée method, post-maceration for aroma extraction, preserving refinement. Low-temp fermentation around 21 days in stainless steel tanks. Lees-aged, showcasing meticulous winemaking, capturing distinct elegance
Food Match
All kinds of meat, river fish, stews and cheese, with some spices too, such as Moroccan dishes and also roasted vegetables.
