Tasting note
The bouquet unfolds with blackberries, blueberries, and raspberries. The palate boasts a harmonious interplay of balsamic and minty notes, complemented by delicate traces of bergamot and jasmine. Subtle yet vibrant, notes of clove and vanilla add intrigue. Aromas, including tobacco, cocoa powder, and coffee bean, seamlessly integrate into the ensemble.
Vinification
hand-harvested in 15 kg crates, meticulously sorted on arrival. This ensured utmost quality from the harvest's concentrated yield. Controlled fermentation and maceration at low temperatures, with minimal pump-overs, optimized extraction. Swift malolactic fermentation followed racking. Ageing for two years in French oak barriques
