Tasting note
From cool Pomino, high in the Tuscan Apennines, Leonia is a classy Brut sparkling, composed mostly of Chardonnay. With refined, delicate bubbles, it displays a lovely medley of lemon, crisp apple and honeyed notes. Creamy in texture, it is crisp yet gentle, fresh and dry, with a delicious, toasty finish.
Vinification
Chardonnay and Pinot Noir are hand-harvested into small crates, to maintain the fruit in pristine condition. Slow, low-pressure pressing, for the most delicate, which undergoes fermentation in stainless steel and a little oak. Blending and tirage follows, with long ageing on the lees, and refinement through further ageing after disgorgement.
