Tasting note
Silky and medium-bodied, with more guts than Pinot Noir, and yet also beautifully-balanced, harmonious and nuanced. There's complexity on the nose, with rich notes of date and dried fig, alongside black pepper, rusty iron, herbs and sunbaked earth, and it has a wonderfully rounded, velvety texture.
Viticulture
In the Strathbogie Ranges, Fowles Wine farms vines in sandy loam soils born from granite boulders. Low nutrients and poor water retention naturally restrict yields, producing fruit of intensity. Cool climate, gentle slopes and summer sun ensure slow ripening, while hand-tended vines deliver balanced, expressive wines.
Vinification
Fermented using wild yeasts and carefully selected cultures which promote fruit and spice character. Different parcels are matured between 12 and 18 months in French and American oak, to add complexity and contribute lovely vanilla notes. A dash of Cabernet Sauvignon is added to the final blend to add a black cherry lift.
Food Match
Wild game, especially venison or mutton.
