Tasting note
This lip-smacking Pinot Noir develops superbly in the glass. At first, there are savoury herbal, eucalyptus and baked earth notes, which are then joined by a far more generous, juicy fruit character, as it airs. The tannins are soft and succulent, and the wine's high elevation origins are evident from its mouthwatering freshness.
Vinification
Predominantly from Strathbogie Billi’s vineyard, this was crushed and fermented with a Premier Cru yeast to enhance forest fruit, spice and aromatic herb notes. Matured for six months in both stainless steal French oak, and finished off with a dash of Shiraz (6%), adding complex dark fruit and savoury spice notes, and contributing to the tannin structure.

Pair with wild game but especially dishes including duck.
