Tasting note
Pure fruit expression with superb balance and length from the grapes natural sugar level being tempered by oak ageing. A deep ruby red with luscious notes of ripe black fruit, such as blackberries and plums, along with hints of spice and oak. It has a full body, smooth tannins, and flavours of dark fruit, chocolate, and tobacco plus a hint of vanilla.
Viticulture
Known for its stunning red rock formations, high-altitude Cafayate Valley has an extreme desert climate, poor soils, warm days/ cool nights and very little rainfall makes it easy to practice integrated, sustainable and organic viticulture. Further, the wide thermal amplitude allows grapes to become highly concentrated, resulting in smooth, delicious wines.
Vinification
Cold pre-fermentation maceration for 6 days at 4 degrees C. Alcoholic fermentation lasted approximately 15 days at a controlled temperature between 27 and 29 degrees C. Post-fermentation maceration for approximately 20 days. Spontaneous malolactic fermentation.
Food Match
Classic dishes, grilled steaks, roasted lamb, hearty stews. Rich pasta dishes, aged cheeses and even dishes with mushrooms or truffles.
