Tasting note
Fresh and fruity, with tropical notes and floral touches, accompanied by a fresh citrus background. Young and vibrant, fruity profile with a balanced structure. Its refreshing acidity gives it great vivacity.
Viticulture
From Finca El Retiro, at 1,650 metres above sea level in the Cafayate Valley.
Vinification
Hand-harvested 3rd week February, into 20 kg bins. Four hour carbonic maceration, followed by fermentation with selected yeasts for 25 days at 13-15 degrees Centigrade, then malolactic conversion.
Food Match
The classic Salta pairing would be empanadas salteñas - meat pastries flavoured with cumin. This also goes with mild goat cheese, seafood and aromatic Thai curry.
