Tasting note
Intense ruby colour with red berry fruit on the nose, along with spicy notes and hints of figs, menthol and eucalyptyus. These lifted flavours continue to the palate and are backed up by smooth integrated tannins and fresh acidity to crteate a long finish.
Viticulture
Known for its stunning red rock formations, high-altitude Cafayate Valley has an extreme desert climate, poor soils, warm days/ cool nights and very little rainfall makes it easy to practice integrated, sustainable and organic viticulture. Further, the wide thermal amplitude allows grapes to become highly concentrated, resulting in smooth, delicious wines.
Vinification
Made in French oak vats. Pre-fermentative cold maceration for 4 days. Alcoholic fermentation for approximately 10 days at a controlled temperature between 27 and 29 degrees C. Post fermentation maceration for approximately 6 days. Spontaneous malolactic fermentation.
Food Match
Rich, hearty dishes like grilled steaks, lamb, and game meats. Stews, barbecue, and stron, aged cheeses.
