Tasting note
Deep garnet with purple glints, showing great intensity and freshness. Aromas of ripe red fruits such as raspberries, accompanied by subtle spicy notes of white pepper and a touch of smoked wood. A smooth palate and round entry, vibrant acidity that highlights its freshness, with a persistent and balanced finish.
Viticulture
Known for its stunning red rock formations, high-altitude Cafayate Valley has an extreme desert climate, poor soils, warm days/ cool nights and very little rainfall makes it easy to practice integrated, sustainable and organic viticulture. Further, the wide thermal amplitude allows grapes to become highly concentrated, resulting in smooth, delicious wines.
Vinification
Cold pre-fermentation maceration for 6 days at 4 degrees C, alcoholic fermentation for approximately 15 days at a controlled temperature between 27 and 29 degrees C. Post-fermentation maceration for approximately 15 days. Spontaneous malolactic fermentation.
